By the time you get on one of those teams at Tour de France, there are team engineers to help you with your selection of equipment. So don't worry.
In the mean time, if you want to know about fancy and expensive components, trends, etc. Try pick up one of those cycling magazines. With their product reviews and advertisement, I think you can get a pretty good idea what products are out there.
For the majority of us out there, cycling is an exercise, a hobby or a passion. We work around our budget and pick the one we like the best.
